It is now day 9 of National Nutrition Month. To highlight the work that my fellow RDN’s are doing I put together this weeks meal plan with recipes from just a few of the RDN’s sharing recipes online.
Monday: Mushroom and Cauliflower “Bolognese” Sauce with pasta (Rachel Begun Gluten Free RD)
Tuesday: Skinny Cajun Spinach and Shrimp Fettuccine (Skinny Louisiana)
Wednesday: Individual Meatloaf Cups (Zen & Spice)
Thursday: Chicken Pot Pie Bundles (Meal Makeover Moms)
Friday: Roasted Salmon and Asparagus with Lemon Caper Dill Aioli (Kumquat)
Saturday and Sunday is dedicated to cleaning out the refrigerator. Often leftovers do not make it until the weekend. I usually take leftovers to work with me. This saves money and let’s face it what cook at home is always better than the hospital cafeteria food.
