It’s Monday already! It’s the start of a new week and a new week of meal ideas. For this Monday’s Meal Ideas post I am sharing meatless recipes from my fellow nutrition bloggers. Meatless Monday is a campaign that has been around since WWI. Meatless Monday started out as a way to reduce the consumption of staples needed for the war effort. The campaign was revitalized in 2003 to bring attention to the health problems associated with eating too much meat. Studies have shown that diets rich in plants and lower in animal products can lower blood pressure, lower cholesterol levels, reduce weight, and likely reduce some cancer risks. You do not need to become vegan or vegetarian, however making some of your meals meatless can still have a huge impact on your health.
I asked some of my fellow dietitian/health bloggers to share some of their favorite meatless recipes. You will find a variety of recipes this week ranging from pasta dishes to salads and soups. Give meatless a try! You won’t be sorry. Here are twenty-five recipes!
