Black Bean and Corn Salad

- 1 can black beans drained and rinsed
- 2 cups sweet corn cooked
- ½ red bell pepper diced
- 1 cup cucumber cubed
- 1 cup roma tomatoes. diced
- 1 cup red onion diced
- 1 small jalapeno pepper diced
- ¼ cup fresh cilantro chopped
- Juice of 1 lemon
- 3 Tablespoons olive oil
- 1 Tablespoon red wine vinegar
- 1 teaspoon cumin
- ½ teaspoon chili pepper
In large bowl toss together beans, corn, bell pepper, tomatoes, onion, jalapeno pepper, and cilantro.
In a small bowl whisk together lemon juice, olive oil, vinegar, cumin, and chili pepper.
Add dressing to the salad, stir to coat.
