Garlic Shrimp with Blistered Tomatoes on Herbed Lemon Linguine

- 2 pints cherry or grape tomatoes
- 2 tablespoons olive oil divided
- ½ teaspoon crushed red pepper
- 1 teaspoon salt divided
- 2 tablespoons butter
- 2 lbs unpeeled large raw shrimp, peeled and deveined
- 4 cloves garlic minced
- 1 cup crumbled feta cheese
- Linguine
- 12 oz uncooked whole-grain linguine
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- 2 teaspoons grated lemon rind
Preheat broiler.
Toss tomatoes with 1 tablespoon oil, red pepper and ¼ teaspoon salt on a rimmed baking sheet.
Broil 4 to 5 minutes or until tomatoes burst.
Melt butter in a large skillet with remaining 1 tablespoon oil.
Sprinkle shrimp with remaining ¾ teaspoon salt.
Saute shrimp and garlic in butter and oil 2 to 3 minutes or just until shrimp turn pink.
Toss shrimp with tomato mixture.
Divide into 6 equal portions.
Serve over Herbed Lemon Linguine, and sprinkle each serving evenly with cheese.
