Garlic Shrimp with Blistered Tomatoes on Herbed Lemon Linguine

Ingredients
  

  • 2 pints cherry or grape tomatoes
  • 2 tablespoons olive oil divided
  • ½ teaspoon crushed red pepper
  • 1 teaspoon salt divided
  • 2 tablespoons butter
  • 2 lbs unpeeled large raw shrimp, peeled and deveined
  • 4 cloves garlic minced
  • 1 cup crumbled feta cheese
  • Linguine
  • 12 oz uncooked whole-grain linguine
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil
  • 2 teaspoons grated lemon rind

Instructions
 

  • Preheat broiler.
  • Toss tomatoes with 1 tablespoon oil, red pepper and ¼ teaspoon salt on a rimmed baking sheet.
  • Broil 4 to 5 minutes or until tomatoes burst.
  • Melt butter in a large skillet with remaining 1 tablespoon oil.
  • Sprinkle shrimp with remaining ¾ teaspoon salt.
  • Saute shrimp and garlic in butter and oil 2 to 3 minutes or just until shrimp turn pink.
  • Toss shrimp with tomato mixture.
  • Divide into 6 equal portions.
  • Serve over Herbed Lemon Linguine, and sprinkle each serving evenly with cheese.
